Ingredients

1 teaspoon olive oil

1 medium onion, thinly sliced

5 boneless, skinless chicken thighs

⅓ cup lower-carb BBQ sauce

½ cup shredded cheese (cheddar, mozzarella, or colby jack)

Instructions

  1. Heat olive oil in a medium skillet over medium heat.
  2. Add sliced onions and sauté for 3–4 minutes until they begin to soften.
  3. Season chicken thighs with salt and pepper, then add them to the skillet with the onions.
  4. Cover and cook for 2–3 minutes.
  5. Uncover and continue cooking until the chicken reaches an internal temperature of 165°F (about 10 minutes).
  6. Remove the chicken from the skillet, shred it using two forks, and return it to the skillet.
  7. Stir in the barbecue sauce and mix well.
  8. Top with shredded cheese and cover for 1–2 minutes to melt the cheese.
