Loaded Baked Potato Casserole is a creamy, cheesy, and savory dish that brings together the comforting flavors of baked potatoes, ground beef, and melted cheese. Ingredients

  • 6 large russet potatoes
  • 1/4 cup unsalted butter
  • 4 oz cream cheese
  • 2/3 cup sour cream
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste
  • 2 cups shredded cheddar cheese
  • 1 1/2 cups cooked ground beef
  • 1/4 cup diced green onions

Instructions

  1. Preheat your oven to 375°F (190°C) and spray a 9x13-inch casserole dish with nonstick cooking spray.
  2. Wash, peel, and dice the potatoes, then place them in a large pot. Cover with water and bring to a boil. Cook until the potatoes are tender.
  3. Drain the potatoes and gently place them back into the pot. Fold in the butter, cream cheese, sour cream, and milk until combined, being careful not to mash the potatoes.
  4. Add garlic powder, salt, pepper, 1 1/2 cups of shredded cheese, and the cooked ground beef to the potatoes. Gently mix, then transfer to the prepared casserole dish.
  5. Top with the remaining 1/2 cup of cheese.
  6. Bake in the preheated oven for 25-30 minutes, until the cheese is melted and bubbly.
  7. Remove from the oven and sprinkle with diced green onions before serving.

Notes

  • You can substitute ground beef with cooked sausage or shredded chicken for variation.
  • For added flavor, sauté vegetables like onions, bell peppers, or mushrooms and mix them into the casserole.
  • To make it extra cheesy, feel free to add more cheese to the top.
