Instructions

  1. Prepare Lemonade Soak: Pour lemonade into a shallow bowl.

  2. Make Mascarpone Filling:

    • Beat mascarpone cheese until smooth.

    • In a separate bowl, whip heavy cream, powdered sugar, and vanilla extract to stiff peaks.

    • Fold whipped cream into mascarpone and stir in lemon zest.

  3. Assemble Layers:

    • Quickly dip ladyfingers in lemonade and lay them in a dish.

    • Spread half of mascarpone mixture on top.

    • Add a layer of lemon curd.

    • Repeat layers, ending with mascarpone on top.

  4. Chill: Cover and refrigerate for at least 4 hours or overnight.

  5. Serve: Garnish with lemon slices or zest before serving.

Notes

  • Quickly dip ladyfingers to avoid sogginess.

  • Store-bought lemon curd works well.

  • Use gluten-free ladyfingers for a GF option.

  • For a boozy version, use limoncello instead of lemonade.

  • Add berries for extra color and flavor.
