Lazy Man's Pie Peach Cobbler is a simple and delicious dessert with a buttery, crisp topping and sweetened fruit, perfect for any occasion without much effort.

Ingredients

1 stick butter or margarine (1/2 cup)

1 cup milk

1 cup granulated sugar

1 cup all-purpose flour

1 teaspoon baking powder

Dash of salt

1 quart sweetened fruit (such as peaches, cherries, or blackberries)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Melt the butter and pour it into a 9x13-inch baking dish.
  3. In a mixing bowl, combine the milk, sugar, flour, baking powder, and a dash of salt. Stir until well mixed.
  4. Pour the mixture over the melted butter in the baking dish. Do not stir it in—just pour it over the butter.
  5. Spoon the sweetened fruit over the batter evenly.
  6. Bake in the preheated oven for about 45-50 minutes, or until the top is golden brown and the fruit is bubbling.

Notes

  • You can substitute peaches with other fruits like cherries, blackberries, or a mix of your favorites. Adjust the sugar amount based on the sweetness of the fruit.
  • Add a pinch of cinnamon or nutmeg to the batter for a warm, spiced flavor.
  • Use a gluten-free flour blend in place of all-purpose flour to make this cobbler gluten-free.
  • Top with a scoop of vanilla ice cream or a dollop of whipped cream for extra indulgence.
  • Leftovers can be stored in an airtight container in the fridge for up to 3 days.
  • Reheat individual servings for 20-30 seconds in the microwave or bake at 350°F for 10-15 minutes until warmed through.
