Lasagna Soup is a comforting and easy-to-make one-pot meal that combines all the savory flavors of traditional lasagna in a cozy, hearty soup. With rich ground beef, tomatoes, pasta, and gooey cheese, this recipe is perfect for busy weeknights or meal prep. It's a family favorite that’s quick, satisfying, and ideal for leftovers!

Ingredients

Olive oil (or preferred cooking oil)

1 lb ground beef

1 medium onion, chopped

3 cloves garlic, minced

1 can (14.5 oz) canned tomatoes (whole, diced, or crushed)

1 can (8 oz) tomato sauce

1 can (6 oz) tomato paste

4 cups chicken broth (or any preferred broth)

1-2 cups water (to adjust thickness)

1 tbsp Italian seasoning

2 cups bowtie pasta (or any sturdy pasta like macaroni, rigatoni, or penne)

1 cup ricotta cheese

1 cup mozzarella cheese, shredded

½ cup Parmesan cheese, grated

Fresh parsley, for garnish

Instructions

  • In a large pot, heat olive oil over medium heat. Add ground beef, onions, and garlic. Cook until the beef is browned and the onions are soft.

  • Drain excess fat and add the canned tomatoes, tomato sauce, tomato paste, broth, and Italian seasoning. Stir well to combine.

  • Add the pasta, bring the soup to a boil, then reduce heat and simmer for 10-15 minutes until the pasta is tender. Add water or broth to adjust the consistency as needed.

  • Once the pasta is cooked, serve the soup in bowls and top with ricotta, mozzarella, and Parmesan cheese. Garnish with fresh parsley.

  • If you prefer a leaner option, substitute ground turkey for ground beef.

  • For a thicker broth, opt for crushed tomatoes instead of diced tomatoes.

  • You can add vegetables like spinach, zucchini, or carrots for extra nutrition.

  • To make this in a slow cooker: Brown the beef, onions, and garlic in a skillet first, then transfer everything to the slow cooker, cooking on low for 4-6 hours. Add pasta 30 minutes before serving.
