1 tablespoon soy sauce

1 tablespoon rice vinegar

1 tablespoon sesame seeds (optional)

2 green onions, sliced (optional)

2 eggs

1/2 cup kimchi (optional)

1/2 cucumber, sliced

1/2 cup radishes, thinly sliced

Instructions

  1. Prepare the Rice: Start by cooking the rice according to package instructions.
  2. Make the Sauce: In a small bowl, combine the gochujang paste, honey, brown sugar, minced garlic, grated ginger, sesame oil, soy sauce, and rice vinegar. Mix well until the sugar dissolves and the sauce is smooth.
  3. Cook the Chicken: Heat a large pan over medium heat. Add the chicken thighs and cook until they are about halfway done.
  4. Add the Sauce: Pour the prepared sauce over the chicken. Continue cooking until the chicken is fully cooked and the sauce has thickened, about 5 more minutes.
  5. Prepare the Eggs: In a separate pan, heat a bit of oil over medium-high heat. Crack the eggs into the pan and cook sunny side up until the whites are crispy and the yolks remain runny.
  6. Assemble the Dish: Serve the cooked chicken over a bed of rice. Top with the crispy egg, sliced cucumber, radishes, and kimchi if using. Garnish with sesame seeds and green onions.
