Ingredients

4 beef steaks (sirloin or ribeye)

2 tablespoons olive oil

2 tablespoons butter

Salt and black pepper to taste

3 garlic cloves, minced

1 cup heavy cream

1/4 cup beef or chicken stock

1 teaspoon Dijon mustard

1/2 teaspoon dried thyme

Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil and butter in a skillet over medium-high heat. Season the steaks generously with salt and pepper.
  2. Sear the steaks for 3-4 minutes per side for medium-rare, or adjust the cooking time to your preferred doneness. Remove the steaks from the skillet and set aside to rest.
  3. Using the same skillet, add the minced garlic and sauté for 30 seconds until fragrant.
  4. Reduce the heat to low and pour in the heavy cream and stock. Stir in Dijon mustard, dried thyme, salt, and pepper. Let the sauce simmer for 3-4 minutes, stirring occasionally, until it thickens slightly.
  5. Return the steaks to the skillet and spoon the creamy garlic sauce over them. Let the steaks warm through for 1-2 minutes.
  6. Serve the steaks hot, topped with the creamy garlic sauce, and garnish with fresh parsley.

Notes

  • Herb lovers: Add rosemary or sage for an aromatic twist.
  • Cheesy upgrade: Stir in grated Parmesan or blue cheese to the sauce.
  • Lighter option: Use half-and-half instead of heavy cream for a lighter sauce.
  • Add mushrooms: Sauté sliced mushrooms with the garlic for extra texture and flavor.
  • Vegetarian version: Replace the steak with portobello mushrooms or grilled tofu.
