Ingredients

  • 12 large eggs, hard-boiled and peeled
  • 1 cup mayonnaise
  • 1 ½ teaspoons rice vinegar
  • ¾ teaspoon ground mustard powder
  • ½ teaspoon granulated sugar
  • 2 jalapenos, seeded and diced
  • 6 pieces of beef, cooked, crisp, and crumbled
  • Paprika, for garnish

Instructions

  • Slice the hard-boiled eggs in half, lengthwise.
  • Remove the yolks and place them in a mixing bowl.
  • Mash the egg yolks with a fork.
  • Add mayonnaise, rice vinegar, ground mustard, and sugar to the yolks, mixing until smooth.
  • Stir in the diced jalapenos and crumbled beef.
  • Transfer the mixture to a Ziploc bag and cut a small hole in one corner.
  • Pipe the filling into the egg whites.
  • Sprinkle with paprika for garnish.
  • Chill until ready to serve.

Notes

  • For less heat, reduce or omit the jalapenos.
  • Substitute sour cream or Greek yogurt for mayonnaise for a tangier flavor.
  • Store in an airtight container in the fridge for up to 2 days.
