Ingredients

15 oz crumbled Italian sausage (mild or spicy)

1 tablespoon olive oil

8 oz bow-tie pasta (farfalle)

2 cups fresh spinach (or thawed frozen spinach)

1 cup sliced crimini mushrooms (or any mushrooms of choice)

1 ½ cups tomato marinara sauce

2 garlic cloves, minced

1 teaspoon Italian seasoning

½ teaspoon red pepper flakes (optional)

Instructions

    • Cook the pasta according to package instructions. Drain and set aside.

    • In a large skillet, heat olive oil over medium heat. Cook the mushrooms until tender, about 5 minutes, then remove them from the skillet.

    • In the same skillet, add the crumbled sausage and cook for 5 minutes, breaking it into pieces. Drain any excess fat.

    • Add garlic, Italian seasoning, and red pepper flakes to the sausage. Cook for another minute.

    • Stir in the tomato marinara sauce and spinach. Bring to a boil, then reduce heat and simmer for 10 minutes, stirring occasionally, until the spinach is wilted.

    • Add the cooked pasta to the skillet and mix well. Top with the cooked mushrooms before serving.
