These tiramisu sandwich cookies transform the classic Italian dessert into handheld treats. Soft espresso-infused cookies are filled with a rich mascarpone cream and dusted with cocoa powder for a perfect bite-sized indulgence.

Ingredients

2 cups all-purpose flour

1 tsp baking powder

1/2 tsp salt

3/4 cup unsalted butter, softened

1/2 cup granulated sugar

1/2 cup brown sugar

2 large eggs

1 tsp vanilla extract

1 tbsp instant espresso powder

8 oz mascarpone cheese, cold

1 cup powdered sugar

Unsweetened cocoa powder, for dusting

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together the flour, baking powder, and salt.
  3. In a separate large bowl, beat the butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each. Stir in vanilla extract and instant espresso powder until fully combined.
  5. Gradually mix in the dry ingredients until a soft dough forms.
  6. Scoop small portions of dough onto the prepared baking sheets and flatten slightly.
  7. Bake for 8–10 minutes or until the edges are set and centers remain soft. Let cool completely on a wire rack.
  8. To make the filling, beat mascarpone cheese and powdered sugar until smooth and fluffy.
  9. Pipe or spoon the mascarpone mixture onto the flat side of half the cookies. Top with the remaining cookies to form sandwiches.
  10. Lightly dust each cookie sandwich with cocoa powder before serving.

Notes

  • Add a splash of coffee liqueur to the filling for an adult twist.
  • Chill the filling before assembling to help it hold its shape.
