Ingredients

  • 4 cups whole wheat flour
  • 1 cup bread flour
  • ⅓ cup rolled oats
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2½ cups buttermilk

Instructions

  1. Preheat Oven: Set to 425°F (220°C) and grease two baking sheets.
  2. Mix Dry Ingredients: In a large bowl, combine whole wheat flour, bread flour, oats, baking soda, and salt.
  3. Add Buttermilk: Stir in buttermilk until a soft dough forms. Do not overmix.
  4. Shape the Dough: Lightly knead on a floured surface. Divide into four equal portions and shape into rounded loaves.
  5. Score the Loaves: Place loaves on baking sheets and cut an "X" on top of each.
  6. Bake: Cook for 30-45 minutes until golden brown and hollow-sounding when tapped.
  7. Cool: Let the bread cool on a wire rack before slicing and serving.
