This simple Irish Brown Bread recipe combines whole wheat flour, oats, buttermilk, and eggs to create a rustic, hearty loaf. Ingredients

  • 4 cups whole wheat flour
  • 1 cup rolled oats
  • ½ cup sugar
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 2 tbsp unsalted butter
  • 2 cups buttermilk
  • 2 large eggs
  • Non-stick cooking spray

Instructions

  • Preheat your oven to 375°F (190°C). Spray a 9-inch round pan or cast iron skillet with non-stick spray.
  • In a large mixing bowl, combine dry ingredients: whole wheat flour, oats, sugar, salt, baking soda, and baking powder.
  • Add softened butter to the dry ingredients and blend it using a pastry cutter or your hands until the texture resembles coarse sand.
  • In a separate bowl, whisk the eggs and mix with buttermilk. Pour this mixture into the well of the dry ingredients and stir until fully combined.
  • Gently knead the dough on a floured surface and shape it into a round loaf. Place it in the prepared skillet.
  • Score an “X” on top of the dough and sprinkle with flour.
  • Bake for 40-45 minutes, checking with a toothpick to ensure the bread is done. The toothpick should come out clean.
  • Let the bread cool for 30 minutes before slicing.

Notes

  • Storage: Store wrapped in plastic on the counter for up to 3 days, or refrigerate for longer shelf life. Freezes well for up to 4 months.
  • Buttermilk Substitute: Combine 1 tablespoon vinegar with 1 cup regular milk and let it rest for 5 minutes.
  • Loaf Pan Option: You can use a 9-inch loaf pan for a more traditional shape.
