½ cup breadcrumbs
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon Italian seasoning
Salt and pepper, to taste
1 cup beef broth
1 ½ pounds baby potatoes, halved (or whole if small)
½ cup ketchup
2 tablespoons chili sauce (optional)
Pour beef broth into the Instant Pot.
Arrange the baby potatoes at the bottom of the pot.
In a mixing bowl, combine ground beef, chopped onion, egg, breadcrumbs, garlic powder, onion powder, Italian seasoning, salt, and pepper. Mix until well combined.
Shape the meat mixture into a loaf and wrap it in aluminum foil.
Place the meatloaf on top of the potatoes in the Instant Pot.
Seal the Instant Pot and cook on high pressure for 30 minutes.
After cooking, carefully release the pressure and remove the meatloaf.
Brush the meatloaf with ketchup and chili sauce (optional), then broil for 5 minutes to caramelize the topping.
Let the meatloaf rest for 10 minutes before slicing and serving with the potatoes.
You can experiment with different seasonings like chili powder, taco seasoning, or smoked paprika for added flavor.
Try using ground turkey for a leaner version of this dish.
For a different topping, use a mixture of brown sugar and vinegar for a sweet and tangy finish.
