Ingredients

1 ½ pounds ground beef (80/20)

1 small onion, chopped

1 egg

½ cup breadcrumbs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon Italian seasoning

Salt and pepper, to taste

1 cup beef broth

1 ½ pounds baby potatoes, halved (or whole if small)

½ cup ketchup

2 tablespoons chili sauce (optional)

Instructions

  • Pour beef broth into the Instant Pot.

  • Arrange the baby potatoes at the bottom of the pot.

  • In a mixing bowl, combine ground beef, chopped onion, egg, breadcrumbs, garlic powder, onion powder, Italian seasoning, salt, and pepper. Mix until well combined.

  • Shape the meat mixture into a loaf and wrap it in aluminum foil.

  • Place the meatloaf on top of the potatoes in the Instant Pot.

  • Seal the Instant Pot and cook on high pressure for 30 minutes.

  • After cooking, carefully release the pressure and remove the meatloaf.

  • Brush the meatloaf with ketchup and chili sauce (optional), then broil for 5 minutes to caramelize the topping.

  • Let the meatloaf rest for 10 minutes before slicing and serving with the potatoes.
