This Hungarian Keto Goulash is a comforting, low-carb dish that brings authentic flavors right to your kitchen. Perfect for keto followers, this slow-cooked stew is made with tender beef stew meat, smoky paprika, and rich beef stock, creating a thick and hearty sauce. Serve it with mashed cauliflower for a complete and satisfying meal.

Ingredients

  • Beef stew meat
  • Onion
  • Garlic
  • Avocado oil
  • Cider vinegar
  • Beef stock
  • Tomato paste
  • Spices: paprika, smoked hot paprika, thyme, bay leaves
  • Salt and pepper

Instructions

  • Brown the beef cubes in avocado oil until browned on all sides. Transfer the beef to the crockpot.
  • In the same pan, cook the onions and garlic until tender. Add the paprika, thyme, and bay leaves, and cook for another minute.
  • Deglaze the pan with cider vinegar and beef stock. Add this mixture to the crockpot.
  • Add the remaining beef stock and tomato paste to the crockpot, stirring everything together.
  • Set the slow cooker to low and cook for about 6 hours, or until the beef is tender.

Notes

  • For a vegetarian version, substitute beef with mushrooms and use vegetable broth instead of beef stock.
