This homemade microwave lemon curd is a quick, foolproof way to enjoy a rich, tangy-sweet spread bursting with fresh lemon flavor. Ready in just minutes, it’s perfect for topping scones, filling cakes, or simply enjoying by the spoonful.

Ingredients

½ cup unsalted butter

1¼ cups granulated sugar

3 large eggs, room temperature

1 egg yolk, room temperature

1 cup fresh lemon juice

Zest from 3 lemons

Instructions

  1. Melt the butter in the microwave and set aside to cool slightly.
  2. In a medium-sized microwave-safe bowl, whisk together the sugar, eggs, and egg yolk until smooth.
  3. Stir in the lemon juice and zest.
  4. Whisk in the melted butter until fully incorporated.
  5. Microwave the mixture on 50% power for one minute. Stir well.
  6. Continue microwaving at full power in one-minute intervals, stirring after each, until the mixture thickens enough to coat the back of a spoon.
  7. Strain the curd through a fine-mesh sieve to remove the zest.
  8. Pour the curd into sterile jars and store in the refrigerator.
