High Protein Creamy Garlic Cheesy Chicken & Potatoes

A hearty and flavorful meal combining tender chicken, creamy garlic sauce, and perfectly cooked potatoes, packed with protein for a filling dinner.

Ingredients

2 boneless, skinless chicken breasts

4 medium potatoes, peeled and diced

1 tablespoon olive oil

4 cloves garlic, minced

1 cup heavy cream

1/2 cup chicken broth

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 tablespoon fresh thyme (or 1 teaspoon dried thyme)

1 teaspoon garlic powder

Salt and pepper to taste

Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the diced potatoes and cook, stirring occasionally, until golden and tender, about 8-10 minutes. Remove from the skillet and set aside.
  2. Season the chicken breasts with salt, pepper, and garlic powder. In the same skillet, add the chicken breasts and cook for 5-6 minutes on each side until browned and cooked through. Remove from the skillet and set aside to rest.
  3. In the same skillet, add the minced garlic and cook for about 1 minute until fragrant. Pour in the heavy cream and chicken broth, stirring to combine. Bring the mixture to a simmer, and cook for 3-5 minutes until it thickens slightly.
  4. Add the mozzarella and Parmesan cheese to the sauce, stirring until melted and smooth. Season with fresh thyme, salt, and pepper to taste.
  5. Slice the cooked chicken breasts into strips. Return the potatoes to the skillet and stir them into the creamy sauce. Arrange the sliced chicken on top. Let everything simmer together for another 2-3 minutes to combine the flavors.
  6. Serve hot, garnished with fresh parsley.
