Ingredients

For the Salad:

  • 1 lb chicken breast, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 4 cups packed greens of choice (romaine, spinach, arugula, etc.)
  • ¼ small red onion, sliced
  • ¾ cup cherry tomatoes, halved
  • ½ English cucumber, sliced
  • 1 avocado, sliced
  • ⅓ cup corn (fresh or canned)

For the Homemade Ranch Dressing:

  • 1 cup plain non-fat Greek yogurt
  • 2-3 cloves garlic, minced
  • 2 teaspoons lemon juice
  • 2 tablespoons onion, chopped
  • 1 tablespoon Dijon mustard
  • 2 tablespoons fresh chives, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh dill, chopped
  • Sea salt and pepper, to taste

Instructions

  • Prepare the Ranch Dressing:

    • In a small jar, mix all dressing ingredients. Secure the lid and shake well until emulsified.
  • Marinate the Chicken:

    • Coat the chicken pieces with one-third of the prepared dressing and let marinate for at least 15 minutes.
    • Refrigerate the remaining dressing until ready to use.
  • Cook the Chicken:

    • Heat olive oil in a large non-stick pan over medium heat.
    • Add the marinated chicken and cook for 5-7 minutes until golden brown and cooked through.
  • Assemble the Salad:

    • In a large bowl, arrange the greens.
    • Add red onion, cherry tomatoes, cucumber, avocado, corn, and cooked chicken.
  • Dress the Salad:

    • Drizzle the reserved ranch dressing over the salad just before serving.
