Ingredients

1 1/2 cups all-purpose flour

1 1/2 teaspoons baking powder

1/2 teaspoon salt

1/2 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1/4 cup butterscotch sauce

1/2 cup milk

1/2 teaspoon baking soda

For the Frosting:

1/2 cup unsalted butter, softened

1 1/2 cups powdered sugar

1/4 cup butterscotch sauce

1 teaspoon vanilla extract

1-2 tablespoons milk (to adjust consistency)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.

  2. In a medium bowl, whisk together flour, baking powder, salt, and baking soda.

  3. In a large bowl, cream butter and sugar until light and fluffy.

  4. Beat in eggs one at a time, then mix in vanilla extract and butterscotch sauce.

  5. Gradually add dry ingredients, alternating with milk, starting and ending with dry ingredients. Stir until combined.

  6. Divide batter evenly among cupcake liners, filling each about 2/3 full.

  7. Bake for 18-20 minutes or until a toothpick comes out clean. Let cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.

  8. For the frosting, beat together softened butter and powdered sugar until smooth. Add butterscotch sauce and vanilla, then mix well.

  9. Add milk to adjust frosting consistency. Once cupcakes are completely cool, pipe or spread frosting on top.

Notes

  • If desired, add butterscotch chips to the batter for extra texture.
