Ingredients

  • 1 lb ground turkey
  • 2 medium sweet potatoes, peeled and cut into small cubes
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • Salt and black pepper, to taste
  • 1 cup fresh spinach, roughly chopped
  • Fresh parsley (optional, for garnish)

Instructions

  • Heat a large skillet over medium heat and add olive oil. Once hot, sauté the chopped onion and minced garlic for 2 to 3 minutes until softened and fragrant.
  • Add the cubed sweet potatoes to the skillet. Stir occasionally and cook for about 10 minutes until they begin to soften. Add a splash of water if necessary to prevent sticking.
  • Push the sweet potatoes to one side of the skillet and add the ground turkey. Break the meat into crumbles and cook for about 5 to 7 minutes, stirring occasionally, until browned.
  • Season with smoked paprika, cumin, salt, and black pepper, stirring to coat evenly. Add the bell pepper and cook for another 3 to 4 minutes.
  • Stir in the chopped spinach and cook for 2 minutes until wilted. Remove from heat and garnish with fresh parsley if desired.
