Ingredients

  • 1 lb ground turkey
  • 2 medium sweet potatoes, peeled and cut into small cubes

  • 1 bell pepper, diced
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • Salt and black pepper, to taste
  • 1 cup fresh spinach, roughly chopped
  • Fresh parsley (optional, for garnish)

Instructions

  • Sauté the Aromatics: Heat a large skillet over medium heat and add 1 tablespoon of olive oil. Add the chopped onion and minced garlic. Sauté for 2-3 minutes until softened and fragrant.
  • Cook the Sweet Potatoes: Add cubed sweet potatoes to the skillet. Cook for 10 minutes, stirring occasionally, until they soften. Add a splash of water if necessary.
  • Brown the Ground Turkey: Push the sweet potatoes to one side of the skillet and add ground turkey. Break it up into small crumbles and cook for 5-7 minutes until browned.
  • Season and Add Vegetables: Sprinkle smoked paprika, cumin, salt, and pepper over the mixture. Add the diced bell pepper and cook for another 3-4 minutes.
