Grinch Cake Mix Cookies are festive, soft-baked vanilla cookies made with cake mix and finished with a sweet raspberry jam heart in the center. Their bright green color and sparkling sugar coating make them perfect for holiday parties and cookie exchanges.

Ingredients

1 box (13.25 ounces) vanilla cake mix

⅔ cup all purpose flour

2 large eggs

⅓ cup butter, melted

2 tablespoons sour cream

Green food coloring (as needed)

½ cup sanding sugar or granulated sugar

3 tablespoons raspberry jam

Instructions

  1. Preheat the oven to 350°F.
  2. In a large bowl, whisk together the vanilla cake mix and all purpose flour.
  3. Add the eggs, melted butter, sour cream, and green food coloring. Mix with a hand or stand mixer until a thick dough forms.
  4. Use a medium cookie scoop to portion out 18 dough balls.
  5. Roll each dough ball in sanding sugar or granulated sugar, then gently press into thick round discs.
  6. Place six cookies at a time onto a silicone mat or parchment-lined baking sheet.
  7. Bake for 10 to 12 minutes, or until the cookies are set and no longer glossy on top.
  8. Remove from the oven and immediately create heart-shaped indentations using your pinky finger or a small heart-shaped cutter.
  9. Spoon or pipe raspberry jam into each indentation.
  10. Allow cookies to cool completely on the baking sheet before serving.

Notes

  • Chill the dough for 20 to 30 minutes if it is too sticky to handle.
  • White cake mix can be substituted for vanilla cake mix.
  • Strawberry or cherry preserves can replace raspberry jam.
  • Add ½ teaspoon vanilla extract for stronger vanilla flavor.
  • Store in an airtight container at room temperature for up to 5 days.
  • Freeze cooled cookies for up to 3 months and thaw at room temperature before serving.
