These Green Whoopie Pies are a fun and festive treat that adds a pop of color and sweetness to any occasion. Made with Pillsbury™ Sugar Cookie Dough, these easy-to-make pies feature a soft, vibrant green cookie with a creamy frosting center, perfect for holidays like St. Patrick’s Day or any event needing a little extra cheer. With just five simple ingredients, these whoopie pies are a hit with minimal effort!

Ingredients

  • 1 roll (16.5 oz) refrigerated Pillsbury™ Sugar Cookie Dough
  • 2 eggs
  • 1/2 cup plus 1 tablespoon all-purpose flour
  • 1/2 teaspoon green gel food color
  • 1 cup cream cheese creamy ready-to-spread frosting (from 16-oz container)

Instructions

  1. Preheat oven to 350°F. Line 2 large cookie sheets with parchment paper. Let cookie dough sit at room temperature for 10 minutes to soften.
  2. Break up the cookie dough in a large bowl, then add the eggs, flour, and green food color. Mix with an electric mixer on medium speed for about 30 seconds until well blended.
  3. Place the mixture in a piping bag fitted with a tip, or in a resealable plastic bag with one corner cut off. Pipe 1 1/4-inch circles onto the prepared cookie sheets, spacing them 1 inch apart.
  4. Bake for 8 to 10 minutes until cookies are set and spring back when touched. Cool on the sheets for 2 minutes, then transfer to a cooling rack to cool completely, about 30 minutes.
  5. Once cooled, pipe frosting onto the flat side of one cookie and top with another cookie to form a whoopie pie.
