  • 24 chocolate-covered mint cookies, divided
  • 2 cups whipped topping
  • 1 chocolate crumb crust (9 inches)

Instructions

  • In a large bowl, beat the cream cheese until fluffy. Gradually add the sweetened condensed milk and beat until smooth. Mix in the green food coloring.
  • Coarsely crush 16 cookies and stir them into the cream cheese mixture.
  • Fold in the whipped topping until the mixture is smooth and fluffy.
  • Spoon the filling into the chocolate crumb crust.
  • Cover and freeze the pie overnight.
  • Before serving, remove the pie from the freezer and let it sit for about 15 minutes to soften slightly.
  • Garnish with the remaining crushed cookies.

Notes

  • For a more adult twist, add crème de menthe or crème de cacao to the filling.
  • Substitute the chocolate-covered mint cookies with mint Oreos for a similar flavor.
  • For a gluten-free version, use a gluten-free chocolate or graham cracker crust.
