Ingredients

  • 8 oz pasta (spaghetti, linguine, or fettuccine)
  • 1 lb large shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 2 tbsp butter
  • 2 tbsp olive oil
  • 1/2 tsp red pepper flakes (optional)
  • 1/2 cup dry white wine (or chicken broth for non-alcoholic version)
  • 1 tbsp lemon juice
  • Zest of 1 lemon
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  • Cook the pasta according to the package directions. Drain and set aside, reserving about 1/2 cup of pasta water.
  • In a large skillet, heat olive oil and butter over medium heat.
  • Add shrimp, season with salt, pepper, and red pepper flakes (if using). Cook shrimp for about 2-3 minutes per side until they are pink and opaque. Remove shrimp and set aside.
  • In the same skillet, sauté minced garlic for 1 minute until fragrant.
  • Pour in white wine (or chicken broth) and lemon juice, scraping up any browned bits from the pan. Simmer for 2-3 minutes.
  • Add the cooked pasta to the skillet, tossing to coat in the sauce. Add shrimp back into the pan and toss together. If needed, add reserved pasta water to loosen the sauce.
  • Stir in lemon zest and adjust seasoning with salt and pepper.
  • Serve in bowls, garnished with fresh parsley if desired.

Notes

  • For a spicier version, increase the amount of red pepper flakes or add fresh chili peppers.
  • For a creamy version, add 1/4 cup heavy cream to the sauce.
  • You can use gluten-free pasta if needed for a gluten-free option.
