Ingredients

  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper, to taste
  • 12 oz fresh or frozen cheese tortellini
  • 2 cups broccoli florets, steamed or blanched
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon butter
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the Chicken: Heat olive oil in a large skillet over medium heat. Season chicken with garlic powder, onion powder, salt, and pepper. Cook for 7-8 minutes until browned and cooked through. Remove from the skillet and set aside.

  2. Make the Sauce: In the same skillet, add a bit more olive oil or butter if needed. Add minced garlic and cook for 1 minute until fragrant. Pour in heavy cream and bring to a gentle simmer. Stir in Parmesan cheese and butter, cooking for 3-4 minutes until the sauce thickens. Adjust seasoning to taste.

  3. Cook the Tortellini: Meanwhile, cook the tortellini according to package instructions. Drain and set aside.

  4. Combine Ingredients: Add cooked chicken, steamed broccoli, and cooked tortellini to the skillet with the sauce. Stir everything together until well coated.

  5. Serve: Garnish with crushed red pepper flakes and fresh parsley. Serve immediately.

Notes

  • Vegetable Swap: Substitute broccoli with spinach, peas, or bell peppers.
  • Protein Options: Replace chicken with shrimp, turkey, or a vegetarian alternative.
  • Cheese Variations: Try Pecorino Romano or Asiago for a bolder flavor.
  • Storage: Keep leftovers in an airtight container in the fridge for up to 3-4 days.
  • Reheating: Warm on low heat in a skillet, adding a splash of cream if needed.
