Garlic Parmesan Chicken & Potatoes is a quick and easy skillet meal combining tender chicken, crispy potatoes, and a cheesy, garlicky sauce. Perfect for a busy weeknight, it delivers comfort and flavor with minimal effort.

Ingredients

2 chicken breasts

4 - 5 small/medium-sized potatoes

Olive oil

Salt, pepper, garlic powder, paprika (for potatoes)

2 TBSP of butter

1/2 tsp each of salt and pepper

1 tsp each of paprika, onion powder, and Italian seasoning

2 TBSP minced garlic

Buffalo Wild Wings Garlic Parmesan Sauce

1 cup shredded mozzarella cheese

Instructions

  1. Wash, peel, and cut the potatoes into small cubes.
  2. Toss the potato cubes with olive oil, salt, pepper, garlic powder, and paprika (adjust to taste).
  3. Place the seasoned potatoes in the air fryer at 400°F for about 20 minutes, shaking them at least a couple of times during the cooking process.
  4. While the potatoes are cooking, cut the chicken breasts into cubes.
  5. In a skillet, melt a little butter over medium-high heat and cook the chicken cubes.
  6. Season the chicken with 1/2 tsp each of salt and pepper, and 1 tsp each of paprika, onion powder, and Italian seasoning.
  7. Once the chicken is fully cooked, add the minced garlic and Buffalo Wild Wings Garlic Parmesan Sauce to the skillet.
  8. Add the cooked potatoes to the skillet and toss to combine with the chicken and sauce.
  9. Top with shredded mozzarella cheese.
  10. Broil in the oven for a few minutes until the cheese is melted and bubbly (alternatively, you can cover the skillet with a lid and let the cheese melt on the stove).

Notes

  • For extra crispy potatoes, shake them halfway through cooking if using an air fryer or oven.
  • Feel free to add vegetables like broccoli, bell peppers, or spinach for more nutrients and color.
  • If you like it spicy, add red pepper flakes or hot sauce to the sauce mixture.
  • You can substitute the Buffalo Wild Wings Garlic Parmesan Sauce with any garlic Parmesan sauce or a homemade version.
  • Use any melting cheese like cheddar or provolone if mozzarella isn't your favorite.
  • If you don't have an air fryer, roast the potatoes in the oven at 400°F for 25-30 minutes.
