Ingredients

8 oz pasta (spaghetti, fettuccine, or penne)

2 tbsp olive oil

1 lb mushrooms, sliced (button mushrooms or cremini work best)

4 garlic cloves, minced

1 cup heavy cream

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

  1. Boil a large pot of salted water and cook the pasta according to the package instructions until al dente. Drain, reserving about 1/2 cup of pasta water for later.
  2. While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add the sliced mushrooms and cook until they release their moisture and become golden brown, about 5-7 minutes.
  3. Add the minced garlic to the pan and cook for another 1-2 minutes until fragrant, being careful not to burn the garlic.
  4. Pour in the heavy cream and bring to a simmer. Let it cook for 3-4 minutes, allowing the sauce to thicken slightly.
  5. Stir in the Parmesan cheese, salt, and pepper, and mix well until the cheese melts and the sauce becomes smooth.
  6. Add the cooked pasta to the skillet, tossing to combine. If the sauce is too thick, add a little reserved pasta water to achieve the desired consistency.
  7. Serve the pasta in bowls, garnished with freshly chopped parsley and an extra sprinkle of Parmesan cheese.
