Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 12 lasagna noodles
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1/4 cup white wine or chicken broth
  • 1 lemon, zest and juice
  • 2 cups ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese
  • 2 cups heavy cream
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  • Cook the Lasagna Noodles: Cook the lasagna noodles according to package instructions. Drain and set aside.
  • Prepare the Garlic Butter Shrimp: In a skillet, melt butter over medium-high heat. Add garlic and sauté for 1-2 minutes. Add shrimp and cook for 2-3 minutes on each side. Stir in white wine (or chicken broth), lemon zest, and juice. Cook for another 2 minutes and remove from heat.
  • Make the Creamy Sauce: In the same skillet, add heavy cream and bring to a simmer. Stir in Italian seasoning, Parmesan cheese, and half of the mozzarella cheese. Season with salt and pepper. Cook until smooth and cheese is melted.
  • Assemble the Lasagna: Preheat oven to 375°F (190°C). In a 9x13-inch baking dish, layer sauce, lasagna noodles, ricotta, shrimp, and mozzarella. Repeat layers until all ingredients are used, finishing with a layer of sauce and cheese on top.
  • Bake: Cover with foil and bake for 25 minutes. Remove foil and bake for another 10-15 minutes, until top is golden and bubbly.
  • Serve: Let rest for 10 minutes, garnish with parsley, and serve.
