Garlic butter lamb chops are a flavorful dish with tender lamb and a rich, aromatic garlic butter sauce. This recipe is perfect for any occasion, easy to make, and full of delicious flavors.

Ingredients

5 lamb loin chops

Kosher salt and freshly ground black pepper, to taste

2 tablespoons grass-fed butter, melted (use ghee for Whole30)

3 cloves garlic, minced

1 teaspoon fresh thyme, chopped

Instructions

  1. Remove the lamb loin chops from the refrigerator 20-30 minutes before cooking to bring them to room temperature. Pat them dry with a paper towel.
  2. Season both sides of the lamb chops liberally with kosher salt and freshly ground black pepper.
  3. Heat a dry 12-inch cast-iron skillet over medium-high heat. Position the lamb chops fat side down, using tongs to press down for even rendering of the fat. Let the fat render for about 5 minutes.
  4. Once the fat has rendered, lay the chops flat on one side and cook for 3 minutes until browned. Flip the chops and cook the other side for another 3 minutes.
  5. Lower the heat to medium-low and spoon off most of the rendered lamb fat from the skillet.
  6. Add the melted butter (or ghee), minced garlic, and chopped thyme to the skillet. Stir until the butter foams and becomes fragrant.
  7. Spoon the garlic butter mixture over the lamb chops for about a minute to infuse the flavor.
  8. Transfer the lamb chops to a serving dish and pour the remaining garlic butter sauce over the top. Serve immediately.

Notes

  • For a different flavor, you can substitute thyme with rosemary or oregano.
  • Add a pinch of red pepper flakes to the garlic butter sauce for a spicy kick.
  • Grilled lamb chops can be marinated with the garlic butter mixture before grilling.
