Ingredients

For the Chicken Bites:

1 lb (450 g) boneless, skinless chicken breasts, cut into bite-sized pieces

3 cloves garlic, minced

3 tbsp unsalted butter

1 tbsp olive oil

1 tsp paprika

1/2 tsp Italian seasoning

Salt and pepper to taste

For the Parmesan Pasta:

8 oz (225 g) fettuccine or pasta of choice

2 tbsp unsalted butter

2 cloves garlic, minced

1 cup heavy cream

1 cup freshly grated Parmesan cheese

1/4 tsp nutmeg (optional)

Salt and pepper to taste

Fresh parsley for garnish

Instructions

  • Cook the Pasta: Bring salted water to a boil and cook pasta according to package instructions. Reserve 1/2 cup of pasta water before draining.

  • Prepare the Chicken: Toss chicken pieces with paprika, Italian seasoning, salt, and pepper. Heat olive oil and butter in a large skillet over medium heat. Add chicken and cook for 4–6 minutes until golden brown and fully cooked. Add minced garlic and sauté for 1 minute. Remove chicken from the skillet and set aside.

  • Make the Creamy Parmesan Sauce: In the same skillet, melt butter and cook garlic until fragrant. Add heavy cream and bring to a simmer. Gradually stir in Parmesan cheese until smooth. Season with nutmeg (optional), salt, and pepper. Mix in reserved pasta water to adjust sauce consistency.

  • Combine and Serve: Toss cooked pasta in the skillet with the sauce. Top with garlic butter chicken and garnish with fresh parsley and extra Parmesan. Serve immediately.
