Ingredients

2 cups all-purpose flour

1½ teaspoons baking powder

1 teaspoon ground cinnamon

¼ teaspoon ground nutmeg

¼ teaspoon salt

1½ cups milk

¼ cup granulated sugar

2 large eggs

1 teaspoon pure vanilla extract

Vegetable oil for frying

Powdered sugar for dusting

Instructions

  1. In a mixing bowl, beat the eggs until foamy, then stir in the milk and vanilla extract.
  2. In a separate bowl, combine the dry ingredients: flour, baking powder, cinnamon, nutmeg, salt, and sugar.
  3. Gradually mix the wet ingredients into the dry ingredients until you have a smooth batter.
  4. Heat about ¾ inch of vegetable oil in a deep pot or skillet to 375°F.
  5. Using a cookie scoop or spoon, drop spoonfuls of batter into the hot oil. Fry for about 1-2 minutes per side, until golden brown.
  6. Remove from the oil and drain on paper towels. Dust generously with powdered sugar while still warm.
