Soft and chewy sugar cookies loaded with colorful Fruity Pebbles cereal for a fun, fruity crunch in every bite. Perfect for parties, bake sales, or brightening up any dessert table.

Ingredients

1 cup butter, room temperature

1 1/2 cups granulated sugar

1/2 cup light brown sugar

2 large eggs

1 1/2 teaspoons vanilla extract

1 teaspoon baking soda

1/2 teaspoon kosher salt

3 cups all-purpose flour

2 cups Fruity Pebbles cereal

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper and set aside.
  2. In a stand mixer fitted with the paddle attachment, cream the butter, granulated sugar, and brown sugar on medium speed for about 2 minutes until light and creamy.
  3. Add eggs, vanilla extract, baking soda, and kosher salt. Mix for 1 minute until smooth, scraping down the bowl as needed.
  4. Reduce mixer speed to low and gradually add flour. Mix until just combined. Do not overmix.
  5. Gently fold in the Fruity Pebbles cereal until evenly distributed.
  6. Using a 2-tablespoon cookie scoop, drop dough onto prepared baking sheet, spacing cookies about 3 inches apart.
  7. Bake for 9–11 minutes, until edges are lightly golden and centers are set but soft.
  8. Cool on the baking sheet for 3 minutes, then transfer to a wire rack to cool completely.

Notes

  • For extra sweetness, add 1 cup white chocolate chips to the dough.
  • Chill dough for 30–60 minutes for thicker cookies.
  • Store in an airtight container at room temperature for up to 5 days.
  • Freeze baked cookies for up to 3 months and thaw at room temperature before serving.
  • Microwave for 10 seconds to enjoy a warm, fresh-from-the-oven texture.
