Ingredients

  • 1 cup quick oats (use certified gluten-free oats for a gluten-free version)
  • 1/2 cup almond butter (or peanut butter, soy butter, or any nut/seed butter)
  • 1/2 tsp cinnamon
  • 2 tbsp honey (or maple syrup/agave nectar for vegan option)
  • 1 tsp vanilla extract
  • 1 1/2 cups plain Greek yogurt (or any flavored yogurt of choice)
  • 1 cup mixed fresh berries (strawberries, blueberries, raspberries, etc.)

Instructions

  1. Prepare the granola crust: In a mixing bowl, combine oats, cinnamon, almond butter, honey, and vanilla extract. Stir until well mixed and cohesive.
  2. Press the granola into the pan: Line a muffin pan with muffin liners. Press the granola mixture into the bottom of each liner, creating a firm crust.
  3. Add Greek yogurt: Scoop a portion of Greek yogurt into each cup on top of the granola.
  4. Top with berries: Add a few fresh berries and sprinkle any remaining granola crumbles on top for extra crunch.
  5. Freeze: Place the muffin pan in the freezer for at least 3 hours, or until the cups are firm and frozen.
