Crispy, golden, and infused with tropical flavors, Fried Piña Colada Rings are the perfect summer treat, blending juicy pineapple, coconut, and a satisfying crunch in every bite.

Ingredients

Pineapple rings (fresh or canned)

Sweetened shredded coconut

All-purpose flour

Baking powder

Granulated sugar

Salt

Eggs

Milk (or coconut milk for extra flavor)

Rum extract (optional)

Vegetable oil (for frying)

Powdered sugar (optional, for dusting)

Instructions

  • Heat vegetable oil in a deep skillet or fryer to 350°F (175°C).

  • In a bowl, combine flour, baking powder, sugar, and salt.

  • In a separate bowl, whisk together eggs, milk (or coconut milk), and rum extract if using.

  • Dip each pineapple ring into the flour mixture, then the egg mixture, and back into the flour.

  • Roll the ring in shredded coconut, pressing gently to adhere.

  • Fry in hot oil until golden brown, about 2–3 minutes per side.

  • Remove and drain on paper towels.

  • Dust with powdered sugar if desired and serve warm.

Notes

  • For extra coconut flavor, use coconut milk in the batter.

  • Add real rum for an adult version (if not serving kids).

  • Try serving with coconut ice cream for an indulgent twist.

  • Press coconut firmly onto rings to prevent it from falling off during frying.

  • Baking instead of frying is an option, though the rings will be less crispy.
