This French Onion Ground Beef and Rice Casserole is a cozy and flavorful one-pan meal, combining the richness of ground beef, Swiss cheese, and French onion soup with tender rice. Ingredients

  • 1 pound ground beef
  • 1 cup long-grain white rice
  • 1 can (10.5 oz) French onion soup
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 cup beef broth
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 cup shredded Swiss cheese

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a large skillet, heat olive oil over medium heat. Add sliced onion and sauté for about 5 minutes until softened. Add minced garlic and cook for another minute.
  • Add ground beef, breaking it apart with a spoon. Cook until browned (5-7 minutes), then drain excess fat.
  • Stir in French onion soup, diced tomatoes (with juice), beef broth, Worcestershire sauce, thyme, salt, and pepper. Bring to a gentle simmer.
  • Add rice, stir to combine. Cover and reduce heat to low, allowing rice to absorb liquid for 15 minutes.
  • Transfer mixture to a greased 9x13-inch baking dish and spread evenly.
  • Sprinkle shredded Swiss cheese over the top.
  • Cover with aluminum foil and bake for 25 minutes. Remove foil and bake for another 10-15 minutes until cheese is bubbly and golden.
  • Let the casserole rest for a few minutes before serving.

Notes

  • Variations: Add mushrooms, peas, or bell peppers for extra veggies. Swap Swiss cheese for cheddar, mozzarella, or Gruyère. Add red pepper flakes for spice.
  • Storage: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat at 350°F for 15 minutes or microwave individual servings for 2-3 minutes.
