French Butter Cookies (Sable Breton)

French Butter Cookies, also known as Sable Breton, are a classic treat with a rich, buttery flavor and delicate texture, perfect for any occasion.

Ingredients

1/2 cup + 1 tbsp granulated sugar

1/2 cup + 5 tbsp salted butter

3 egg yolks, separated

1 tsp vanilla extract

2 cups + 2 tbsp all-purpose flour, plus more for dusting work surface

Instructions

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Beat the butter and sugar together on medium speed until light and fluffy, about 1 minute.
  3. Add 2 egg yolks and vanilla extract, and mix on medium speed until well combined. Scrape the bowl with a rubber spatula and continue mixing.
  4. Add the flour gradually, mixing on low speed until the dough begins to come together.
  5. Lightly flour a wooden board or countertop. Transfer the dough onto the surface and shape it into a ball. Sprinkle some flour on top and roll the dough out until it’s about 1/4" thick.
  6. Use a medium round cookie cutter (about 2.25"/5.75 cm) to cut out round cookies. Transfer the cookie rounds onto the baking sheet, spacing them apart.
  7. Beat the remaining egg yolk in a small bowl and use a fork to create a cross-hatch pattern on top of each cookie.
  8. Brush the cookies with the beaten egg yolk.
  9. Bake for 12 to 15 minutes, or until the cookies are golden brown. Let them cool completely on a wire rack.

Notes

  • If using unsalted butter, add 1/2 teaspoon of salt to the dough.
  • If the dough is too sticky, sprinkle more flour or chill it in the fridge for 10-15 minutes.
  • The dough can be frozen for up to 3 months before rolling and cutting.
  • For variations, add a pinch of cinnamon, nutmeg, or citrus zest for different flavor profiles.
