Ingredients

1 unbaked 9-inch pie crust

1 lb shrimp (peeled, deveined, and chopped)

2 tbsp butter

2 cloves garlic (minced)

½ cup onion (chopped)

½ cup bell pepper (chopped)

3 large eggs

½ cup heavy cream

1 cup shredded cheddar cheese

1 tbsp fresh parsley (chopped)

Salt & pepper (to taste)

½ tsp Old Bay seasoning

Instructions

1. Preheat & Prep:
Preheat the oven to 375°F (190°C). Place the unbaked pie crust in a pie dish and set it aside.

2. Cook the Filling:
In a skillet, melt the butter over medium heat. Add the onion, garlic, and bell pepper, and sauté for 3-4 minutes until softened. Add the shrimp and cook for 2-3 minutes, or until they turn pink. Season with Old Bay seasoning, salt, and pepper, then remove from heat.

3. Mix & Assemble:
In a bowl, whisk together the eggs and heavy cream. Stir in the shredded cheddar cheese and fresh parsley. Add the shrimp mixture and combine well.

4. Bake:
Pour the shrimp mixture into the prepared pie crust. Bake for 30-35 minutes, or until the center is set and the top is lightly golden.

5. Serve & Enjoy:
Allow the pie to cool slightly before slicing. Garnish with extra parsley, and enjoy warm!
