Ingredients

2 boneless, skinless chicken thighs or breasts

1 teaspoon chili powder

1 teaspoon paprika

½ teaspoon salt

½ teaspoon black pepper

1 tablespoon vegetable oil

3 cups chicken broth

1 tablespoon soy sauce

1 teaspoon sesame oil

2 cloves garlic, minced

¼ cup heavy cream

1 tablespoon butter

2 cloves garlic, minced (for the garlic sauce)

¼ cup heavy cream (for the garlic sauce)

2 packs ramen noodles (fresh or dried)

1 green onion, chopped (for garnish)

1 teaspoon chili oil (optional, for extra heat)

Instructions

  1. Marinate the Chicken: In a bowl, mix chili powder, paprika, salt, and black pepper. Coat the chicken evenly with the spice mixture and let it sit for 15 minutes.
  2. Cook the Chicken: Heat a pan over medium-high heat and add oil. Sear the chicken for 5-7 minutes per side until golden brown and cooked through. Let it rest for a few minutes before slicing.
  3. Prepare the Creamy Garlic Sauce: In a small saucepan, melt butter over medium heat. Add garlic and sauté until fragrant. Pour in the heavy cream, stir, and let it thicken slightly. Remove from heat and set aside.
  4. Cook the Ramen Noodles: Boil water in a pot and cook the ramen noodles according to package instructions. Drain and set aside.
  5. Make the Spicy Broth: In a separate pot, heat sesame oil and sauté minced garlic until aromatic. Add chicken broth, soy sauce, and heavy cream. Simmer for 5-7 minutes to let the flavors meld together.
  6. Assemble the Ramen Bowl: Divide the cooked noodles into bowls. Pour the spicy broth over the noodles. Top with sliced chicken and drizzle with creamy garlic sauce.
  7. Garnish & Serve: Garnish with chopped green onions and a drizzle of chili oil for extra heat. Serve immediately and enjoy!

Notes

  • For a spicier dish, increase the chili powder in the rub or add red pepper flakes to the broth.
  • Feel free to use chicken breasts instead of thighs, though thighs tend to remain juicier.
  • For a vegetarian version, swap chicken for tofu and use vegetable broth.
  • Instant ramen noodles can be used, but it's best to discard the seasoning packet and prepare the broth from scratch.
  • Store leftover broth and chicken separately to prevent noodles from absorbing too much broth.
