These Farmer's Market Vegetarian Quesadillas offer a healthy twist on a classic Mexican favorite, filled with fresh, seasonal vegetables like zucchini, red bell pepper, and mushrooms. Ingredients

  • 1 tablespoon olive oil
  • 1/2 cup chopped red bell pepper
  • 1/2 cup chopped zucchini
  • 1/2 cup chopped yellow squash
  • 1/2 cup chopped red onion
  • 1/2 cup chopped mushrooms
  • 1/4 cup shredded sharp Cheddar cheese
  • 1/8 cup shredded sharp Cheddar cheese
  • 6 whole wheat tortillas
  • Cooking spray

Instructions

  1. Heat olive oil in a large nonstick skillet over medium-high heat. Add the chopped red bell pepper, zucchini, yellow squash, red onion, and mushrooms. Sauté until vegetables are tender, about 7 minutes. Set aside.
  2. Coat the skillet with cooking spray. Place one tortilla in the skillet and sprinkle 1/4 cup of shredded Cheddar cheese evenly over it.
  3. Add 3/4 cup of the sautéed vegetables on top of the cheese, then sprinkle 1/8 cup of shredded cheese over the vegetables. Place another tortilla on top.
  4. Cook until the bottom tortilla is golden brown, about 2-3 minutes. Flip and cook the other side until golden brown and the cheese has melted, about another 2-3 minutes.
  5. Transfer to a cutting board and cut into 8 triangles using a pizza cutter. Repeat with remaining tortillas and filling.
  6. Serve hot with your choice of sides.

  • Cheese Options: Monterey Jack, mozzarella, or Mexican blend cheese can be substituted for sharp Cheddar for a different flavor.
