Ingredients

  • 3 cups frozen hash browns
  • 3/4 cup shredded Monterey Jack pepper cheese
  • 1 cup cubed cooked chicken
  • 1/4 cup green onion, finely chopped
  • 4 well-beaten eggs
  • 1 (12 oz) can evaporated milk
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt

Instructions

  1. Grease a 2-quart rectangular baking dish.
  2. Arrange the frozen hash browns evenly at the bottom of the dish.
  3. Sprinkle the shredded Monterey Jack cheese, cubed chicken, and chopped green onions over the potatoes.
  4. In a separate bowl, combine the beaten eggs, evaporated milk, black pepper, and salt. Mix well.
  5. Pour the egg and milk mixture over the potatoes, cheese, chicken, and onions.
  6. Cover the dish with plastic wrap and refrigerate overnight.
  7. The next day, preheat the oven to 350°F (175°C).
  8. Bake for 40-50 minutes, or until set and lightly browned on top.
  9. Let the casserole rest for 5 minutes before serving.
