These English Muffin Breakfast Pizzas are the perfect combination of breakfast and pizza. With a crispy muffin base, melty cheese, savory beef, and a sunny-side-up egg, they’re a fun and delicious way to start your day.

Ingredients

4 English muffins, split in half

1 tablespoon olive oil

1 cup shredded mozzarella cheese

1/2 cup cooked and crumbled beef

4 eggs

1/2 cup marinara sauce or pizza sauce

Salt and pepper, to taste

Fresh herbs (like basil or parsley) for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Arrange the English muffin halves on a baking sheet, cut side up.
  3. Brush each muffin half with a little olive oil, then spread a tablespoon of marinara sauce on each one.
  4. Sprinkle a generous amount of shredded mozzarella cheese over the sauce.
  5. Add a few spoonfuls of crumbled beef on top of the cheese.
  6. Crack an egg onto each muffin half, trying to keep the yolk intact.
  7. Season with salt and pepper to taste.
  8. Bake the muffins in the preheated oven for about 10-12 minutes, or until the cheese is melted and bubbly and the egg whites are set. For a runny yolk, bake for less time; for a firmer yolk, bake a little longer.
  9. Remove from the oven and garnish with fresh herbs if desired.
