Ingredients

1 pound ground meat (chicken, turkey )

2 tablespoons vegetable oil

1 medium onion, chopped

3 garlic cloves, minced

1 teaspoon grated ginger

1 medium head of green cabbage, thinly sliced

2 medium carrots, shredded

1/4 cup soy sauce

1 tablespoon sesame oil

1 teaspoon rice vinegar

1/4 teaspoon crushed red pepper flakes (optional)

2 green onions, sliced (for garnish)

Optional: sesame seeds, for garnish

Instructions

  1. Cook the Ground Meat: Heat vegetable oil in a large skillet or wok over medium-high heat. Add the ground meat and cook, breaking it up with a spoon, until browned and fully cooked. Drain any excess fat.

  2. Add Onion, Garlic, and Ginger: Add the chopped onion, minced garlic, and grated ginger to the skillet. Cook for 2-3 minutes, stirring occasionally, until the onion softens and the mixture becomes fragrant.

  3. Cook the Veggies: Stir in the sliced cabbage and shredded carrots. Cook for 5-7 minutes, stirring frequently, until the vegetables are tender but still slightly crisp.

  4. Make the Sauce: In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, and crushed red pepper flakes (if using).

  5. Combine and Cook: Pour the sauce over the stir fry and mix well. Cook for an additional 2 minutes to allow the flavors to meld.

  6. Garnish and Serve: Remove from heat and garnish with sliced green onions and sesame seeds. Serve hot, as is or with steamed rice or cauliflower rice for a low-carb option.

Notes

  • Vegetarian Option: Substitute the ground meat with tofu, tempeh, or plant-based ground meat alternatives.

  • Extra Veggies: Add bell peppers, mushrooms, or snap peas for extra color and nutrients.

  • Spicy Kick: Increase the red pepper flakes or drizzle sriracha sauce for extra heat.

  • Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days.
