A quick and delicious turkey club sandwich layered with oven-roasted turkey, cooked beef, avocado, and sun-dried tomato mayonnaise on toasted sourdough bread, perfect for lunch or a light dinner.

Ingredients

½ cup mayonnaise, divided

2 ounces sun-dried tomatoes, drained (plus 2 ounces more for sandwich)

2 cloves garlic

4 slices sourdough bread (or your favorite bread/wrap)

6 slices turkey deli meat, divided

6 slices cooked beef

1 avocado, divided

4 leaves romaine lettuce, divided

Instructions

  1. Combine half the mayonnaise, sun-dried tomatoes, and garlic in a food processor or blender. Blend until smooth to make sun-dried tomato mayonnaise.
  2. Lightly toast the sourdough bread slices until golden brown.
  3. Spread the sun-dried tomato mayonnaise on two slices of the toasted bread.
  4. Layer 3 slices of turkey deli meat and 3 slices of cooked beef on each bread slice with mayonnaise.
  5. Add sun-dried tomatoes, half of the sliced avocado, and two leaves of romaine lettuce on top of the meat layers for each sandwich.
  6. Top each sandwich with the remaining slices of bread.
  7. Cut sandwiches in half diagonally and serve immediately.
