This easy tostada recipe features crispy corn tortillas topped with savory refried beans, seasoned ground beef, and a variety of fresh toppings like avocado, lettuce, and cilantro, finished with a squeeze of lime and sour cream.

Ingredients

4 corn tortillas

1 tbsp olive oil (or cooking spray)

1 lb ground beef

1 small onion, diced

1 tsp garlic powder

1 tbsp taco seasoning

Salt, to taste

1 can (15 oz) refried beans

1 cup iceberg lettuce, shredded

1 avocado, sliced

1 medium tomato, diced

1/4 cup fresh cilantro, chopped

1/2 cup cotija cheese (or queso fresco), crumbled

Lime wedges, for serving

Sour cream (optional)

Instructions

  1. Preheat the oven to 425˚F. Lightly brush or spray the tortillas with olive oil. Place them on a baking sheet and bake for 4 minutes on each side or until golden and crispy.
  2. In a skillet over medium heat, cook the ground beef, breaking it up with a spatula. Add garlic powder, taco seasoning, and salt. Stir in the diced onion and cook until softened and the beef is fully browned.
  3. Heat the refried beans in a skillet over medium heat, or warm them in the microwave until heated through.
  4. Spread a layer of refried beans on each tostada shell. Top with the seasoned ground beef and your choice of toppings: lettuce, avocado, tomato, cilantro, and cheese. Finish with a squeeze of lime and a dollop of sour cream if desired.

Notes

  • Vegetarian: Replace the ground beef with black beans, grilled vegetables, or spicy hummus for a vegetarian version.
  • Spicy: Add jalapeños or a spicy salsa for an extra kick.
  • Seafood: Swap ground beef for shrimp or fish for a lighter seafood twist.
  • Storage: Store leftovers in an airtight container in the refrigerator. Assemble fresh for the best results.
  • For gluten-free, ensure you use gluten-free tortillas.
