Ingredients

1 pound lean ground beef

1 medium onion, diced

1 packet taco seasoning mix

1 (15-ounce) can black beans, drained and rinsed

1 cup corn kernels (fresh or frozen)

1 cup salsa

2 cups crushed tortilla chips

2 cups shredded Mexican cheese blend

Optional toppings: sour cream, diced tomatoes, shredded lettuce, sliced olives, jalapeños

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish.
  2. In a skillet over medium-high heat, sauté the diced onion until translucent. Add ground beef and cook until browned. Drain excess fat.
  3. Stir in taco seasoning, black beans, corn, and salsa. Simmer for 2-3 minutes until heated through.
  4. Spread 1 cup crushed tortilla chips in the prepared baking dish. Layer beef mixture over chips, then sprinkle 1 cup shredded cheese on top. Repeat layers, finishing with remaining cheese.
  5. Bake for 20 minutes or until cheese is melted and bubbly.
  6. Remove from oven and let sit for a few minutes before serving. Add optional toppings as desired.
