Ingredients

1 cup granulated sugar

1/2 cup butter (add up to 1/4 tsp salt if using unsalted)

1 egg

1 1/2 cups all-purpose flour

1/2 cup whole milk

2 cups fresh strawberries, sliced

2 tbsp additional sugar (for macerating strawberries)

1 1/2 cups whipped cream

Instructions

  1. Preheat oven to 350°F (175°C) and grease a square baking pan.
  2. In a mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Add the egg and mix well.
  4. Gradually add the flour and milk, alternating between the two, until a smooth batter forms.
  5. Pour the batter into the prepared pan and bake for 20-25 minutes, or until a toothpick comes out clean.
  6. Allow the cake to cool completely.
  7. Slice strawberries and sprinkle with 2 tbsp sugar. Let sit for 10 minutes to release juices.
  8. Cut the cooled cake into squares, then slice each square horizontally to make two layers.
  9. Spoon strawberries onto the bottom layer, add whipped cream, then top with the second layer.
  10. Finish with more strawberries and whipped cream on top.
