Ingredients

4 salmon fillets (about 6 ounces each)

2 cups fresh spinach, chopped

½ cup cream cheese, softened

¼ cup grated Parmesan cheese

¼ cup breadcrumbs (optional for crunch)

2 cloves garlic, minced

2 tablespoons olive oil

Salt and pepper to taste

Lemon wedges (for serving)

Instructions

  • Preheat oven to 375°F (190°C).

  • Heat 1 tablespoon olive oil in a skillet over medium heat. Add garlic and sauté for 1 minute.

  • Add chopped spinach and cook for 2-3 minutes until wilted. Remove from heat and let cool.

  • Mix the cooked spinach with cream cheese, Parmesan cheese, and breadcrumbs (if using). Season with salt and pepper.

  • Cut a pocket into each salmon fillet, being careful not to cut all the way through.

  • Stuff each fillet with the spinach mixture, pressing gently to fill.

  • Heat remaining olive oil in an oven-safe skillet over medium-high heat. Place salmon fillets skin-side down and cook for 3-4 minutes until the skin is crispy.

  • Flip the salmon and transfer the skillet to the oven. Bake for 10-12 minutes until the salmon flakes easily with a fork.

  • Serve the stuffed salmon warm with lemon wedges.
