4 salmon fillets (about 6 ounces each)
2 cups fresh spinach, chopped
½ cup cream cheese, softened
¼ cup grated Parmesan cheese
¼ cup breadcrumbs (optional for crunch)
2 cloves garlic, minced
2 tablespoons olive oil
Salt and pepper to taste

Preheat oven to 375°F (190°C).
Heat 1 tablespoon olive oil in a skillet over medium heat. Add garlic and sauté for 1 minute.
