Soft homemade gluten-free bread is easier to make than you think! This recipe creates a fluffy, delicious loaf perfect for sandwiches or enjoying with butter and jam. It's gluten-free and offers a soft, airy texture.

Ingredients

¼ cup warm water (about 100°F/37°C)

2 tablespoons honey

4.5 grams dry yeast

1 ½ cups rice flour

¾ cup tapioca starch

½ cup sorghum flour (or buckwheat/oat flour)

1 teaspoon xanthan gum

1 teaspoon salt

2 large eggs

¼ cup warm water

¼ cup oil (vegetable, olive, or melted coconut)

1 tablespoon apple cider vinegar

Instructions

  1. Proof the yeast: In a small bowl, mix the warm water and honey. Add the yeast and stir gently. Let sit for 5-10 minutes until it becomes foamy.
  2. Mix dry ingredients: In a large bowl, combine the rice flour, tapioca starch, sorghum flour, xanthan gum, and salt.
  3. Combine wet ingredients: In another bowl, whisk together the eggs, warm water, oil, and apple cider vinegar.
  4. Mix the batter: Add the proofed yeast mixture to the dry ingredients, then pour in the wet ingredients. Use a stand mixer or hand mixer to combine everything into a smooth batter.
  5. Let the dough rise: Transfer the batter into a parchment-lined loaf pan and let it rise in a warm place until it is about ¼ inch above the edge of the pan, about 1 hour.
  6. Bake: Preheat the oven to 375°F (190°C) and bake the bread for 45 minutes, or until the top is golden brown.
  7. Cool and slice: Let the bread cool completely before slicing.

  • For a dairy-free option, use dairy-free oil and ensure your yeast is free from dairy.
  • If you don’t have xanthan gum, try using guar gum or psyllium husk as an alternative.
