This easy pasta salad is a versatile, quick dish featuring fresh vegetables, cheese, and a tangy dressing, making it perfect for gatherings, BBQs, or potlucks.

Ingredients

16 ounces rotini (or any medium pasta shape like bow ties or fusilli)

1 cup cherry tomatoes, halved

1 cucumber, chopped

1 bell pepper, chopped

1/2 red onion, chopped

1/2 cup black olives, sliced

1/2 cup feta cheese, crumbled (or substitute mozzarella or parmesan)

1 cup vinaigrette dressing (or Italian/Grecian dressing)

Instructions

  1. Cook pasta according to package directions, drain, and rinse under cold water to cool.
  2. Chop vegetables and combine them in a large bowl.
  3. Add the cooked pasta, olives, and cheese to the vegetables.
  4. Pour the dressing over the mixture and toss everything to combine.
  5. Chill in the fridge for at least 2 hours before serving.
