Easy No Bake Cookies are a quick and delicious treat combining chocolate, peanut butter, and oats, perfect for a no-oven dessert that’s family-friendly and customizable.

Ingredients

1/2 cup unsalted butter

1/3 cup cocoa powder

1/2 cup milk

1 1/2 cups granulated sugar

1/3 cup brown sugar (light or dark)

3 cups quick oats

2/3 cup creamy peanut butter

2 tsp vanilla extract

1/2 tsp salt

Instructions

  1. Line two large baking sheets with parchment paper or silicone baking mats.
  2. In a 3-quart saucepan, combine granulated sugar, brown sugar, butter, milk, and cocoa powder.
  3. Bring the mixture to a boil over medium heat, stirring occasionally. Once boiling, set a timer and boil for exactly one minute.
  4. Remove from heat and stir in 2 cups of the quick oats until well coated.
  5. Add peanut butter, vanilla extract, and salt. Stir until the peanut butter is fully melted and the mixture is smooth.
  6. Stir in the remaining quick oats until combined.
  7. Using a medium cookie scoop or two spoons, drop spoonfuls of the mixture onto the prepared baking sheets.
  8. Let the cookies sit at room temperature for about 20 to 30 minutes, or until they are set and firm to the touch.
